Chef Tim Schafer "The Brew Chef"
Tim began his exciting culinary journey approximately thirty years ago. He trained as an apprentice butcher – worked his way up to an apprenticeship in a four star restaurant. It was at that point he discovered his passion for cooking. He was accepted to the Culinary Institute of America in Hyde Park, New York. After graduating in 1988, he ran a couple of high profile restaurants which lead into the first opportunity for his own restaurant & catering endeavors in New Jersey and North Carolina for over twenty years. One of the specialties he learned and mastered was the art of cooking with beer. He was soon nicknamed “The Brew Chef” and is considered to be one of the nations’ top authorities on cooking with beer, with credits in numerous popular books and publications such as “The Brew Chef Corner” and has been featured within the pages of “Ale Street News.” The Brew Chef has been a featured guest on many television and radio shows including the Food Network. Tim is currently working on his first beer enhanced cook book titled “Beer, not just for breakfast anymore!”

Chef Troy Gagliardo "Chef Troy"
For the past six years, Chef Troy has appeared each week on Charlotte’s morning show WCCB News Rising for his “Tuesdays with Troy” live cooking segment. Filmed live each week at the WCCB Charlotte studios, Chef Troy teaches his unique style of food with a simple approach directed toward the home-cook/viewer. Chef Troy teamed up with The Fresh Market as a sponsor for “Tuesdays with Troy” in April of 2011. Troy shops each week at The Fresh Market for the ingredients used on the show, he says, “The Fresh Market sponsorship is something I have pursued for a long time. I love shopping at their markets because everything is always so fresh. They have a large variety of organic and sustainable food options. As a consumer and chef, I couldn’t ask for anything more”. The Chef Troy spice line is available at several local locations, including The Fresh Market, in and around the Charlotte and Lake Norman area. Troy states, “I designed the Spice Mix, which I call a home cooks secret weapon, to be used literally on everything, and to use it exclusively at my restaurants. The Back Rub was designed specifically for pork barbecue and ribs but I soon discovered its versatility by using it on steaks, seafood, vegetables and wild game as well.”
Chef Troy recently published his new cookbook entitled Pseudo Southern and has been endorsed by Fabio Viviani celebrity chef and bestselling author. Fabio says of Pseudo Southern, “Southern food is my second home. It’s as close to my heart like Italy is, and that is why I love Troy’s recipes so much. They remind me of the childhood I would have had if I was born in the south.
Chef Troy is also a freelance food writer for the Charlotte Observer and Examiner.com. Chef Troy lives in Mooresville, NC with his wife Tracy, of twenty-three years, and their two daughters, Ally and Isabella. He can be seen every Tuesday morning from 7-9 am on WCCB News Rising.
Chef Giovanni Pelligrino
Giovanni (Gio) Pelligrino, 45, is a talented chef who owns the restaurant, Pelligrino’s Trattoria, in Troutman, NC alongside his brother Salvatore (Sal) Pelligrino. He moved to North Carolina with most his extended family in 2007 and opened the restaurant the following year. Gio was born in Manhattan, New York and lived there with his family who owned a restaurant, Pompeii Café, for years. He began working with his father at the age of 12 and never looked back.
Once adults, Gio and Sal moved to New Jersey where they opened a restaurant, DuSals and received many awards for their food. They were voted Best Italian Restaurant two years in a row (2003 & 2004). They were also recognized for their amazing New York style pizza and received Best Pizza two years in a row (2004 & 2005). After having the restaurant for seven years, Gio and his brother decided to come down South and share their love of Italian food with all of us.
While Pelligrino’s has been going strong since it opened in 2008, Gio’s passion has now turned into a fun and exciting catering capability for Pelligrino’s. He is making wood fired brick oven pizzas on site for parties and events with a trailer which houses its own brick oven. Gio’s expertise in pizza making would surely make your next event something to remember!
